Mushroom Soup with Farro

Today we have got a Mushroom soup with farro for you, which is hearty enough to keep you full for longer duration and will help you cut off those extra calories from your routine. In case you don't have farro, you can easily replace it with any whole grains like quinoa, oats, barley or wheat berries and adjust the cooking time accordingly.
Sliced Mushrooms - 8oz
Farro - 3/4 cup
Vegetable stock - 3 cups
Diced onion - 1
Butter - 2 tbsp
Sherry (optional) - 1 tbsp
Minced parsley - 1/2 cup
Salt & pepper - To taste
1. Heat butter in a saucepan. Add onions and mushrooms and cook, until mushrooms are brown and have released some liquid, and onions are beginning to caramelize. Add parsley and cook for another 2 minutes.
2. Add broth and bring to a boil. Stir in farro and reduce heat to a simmer until farro is tender, adding more water if too much broth evaporates.
3. Stir in sherry and season well before serving!
