Recipe of the day - Lime Lentil Soup

2 tsp vegetable oil
1 medium onion, chopped finely
2 cloves garlic, crushed
2 cm piece fresh ginger, grated
1 tsp cumin seeds
1 cup red lentils
2 cups vegetable stock
2 1/2 cups water
400g can diced tomatoes
1 tsp finely grated lime rind
1/4 cup lime juice
1/3 cup fresh flat-leaf parsley, chopped
1. Heat oil in saucepan, add onion, garlic, ginger and cumin, cook, stirring, until onion softens.
2. Add lentils, stock, the water and un-drained tomatoes, bring to the boil. Simmer, uncovered, until lentils are softened.
3. Stir in rind and juice, return to the boil. Remove from heat, stir in parsley.
